Power Mix Poached Pears









Ingredients
  • 5 Bosc Pears
  • 1 litre of water
  • 500ml of white wine
  •  2 cups of caster sugar
  • 3 tbsp of Power Mix Tea
  • 1 vanilla pod
Method
  1. Peel all 5 pears and remove the core using a apple corer or a melon baller, the pears should appear to still be whole but with a hole in the bottom where the core was removed.
  2. In a large pot combine the water, wine and sugar. Place on the stove and bring to the boil.
  3. Once at a boil add the power mix, vanilla and pears and reduce the heat till at a simmer.
  4. Continue simmering for 40 minutes.
  5. Check the pears have been cooked all the way through by inserting a knife through until you reach the centre. If the knife comes out smoothly with no resistance your pears are ready. If it feels crisp or firm the pears need to continue simmering and continue to check them every 10 minutes. 
  6. Once the pears are finished they can be served hot or cold and are perfect with ice-cream or custard. If you are not serving your pears immediately keep them stored in the poaching liquid.

Genmaicha









What is it?

Genmaicha is a green tea which has a roasted rice mixed through a traditional Japanese Green tea. By adding roasted popped rice to the green tea the result is a much more delicate tasting tea with a nutty flavour and aroma.
The nutty flavour of this tea compliments savoury food, especially the complex fresh flavours of Japanese dishes.
Genmaicha can also be refereed to as 'popcorn tea'. This is because the popped rice which occurs in the roasting of the rice, resembles little pieces of popcorn.

History

The story of how genmaicha was created can not be set in stone, however the most common belief is that the expense of tea when it became popular in Japan led to genmaicha. The local farmers would mix rice with their tea to stretch it further so they could go without buying it for longer periods of time. The result was the creation of a completely new and unique tea unlike any other.
Although there are other stories about how genmaicha was created this is certainly the most popular tale.

Brewing

  • Filtered water is preferred but not essential, and water used should be below boiling point.
  • The water temperature for genmaicha is 70C. 
  • If you over brew your green tea it will become bitter so keep an eye on it.
  • Generally Green tea should be infused for approximately 2-3 minutes. 
  • Genmaicha can be infused more than once.

Chai Tea









Chai tea has boomed in popularity in the past few years and is now one of the most requested types of tea available at The Tea Centre.
There are currently 6 varieties of chai tea available in store and online...


Chai Masala
This chai is from Northern India/Kashmir and has cinnamon, cardamon, ginger and rose petals within the blend.
Brewing
This tea is brewed with 50% water 50% milk.
  1. Pour tea (1 teaspoon per cup)into saucepan, 
  2. Add milk & water and bring to boil
  3. Serve in tall glass with sugar or honey.
If you prefer your tea black brew this chai for 2-4mins.


Chai vanilla is delicious combination of black tea, vanilla, cinnamon, liquorice, orange peel, fennel & cardamom.
This is the perfect chai if you have a little bit of a sweet tooth!
Brewing
This chai can be brewed like the masala chai, with a dash of milk or black however for something different try brewing your tea and adding hot frothy milk to it. The sweetness of this chai lends itself well too the latte style method.




Rooibos Chai
If you want a decaf chai option rooibos chai will be perfect for you.This tea contains rooibos, cinnamon, anise, fennel, ginger, cloves & black peppercorns and is perfect with a hint of honey for sweetness.
Brewing
This chai is delicious served black but if you are a milk lover this tea can be serve with milk.





Mumbai Chai
This is one of the most popular varieties of chai because of its array of spices and it's hint of vanilla. This chai contains black tea, orange peel, fennel, cinnamon, liquorice, juniper berries, cloves, cardamom, vanilla, ginger & green peppercorns.
Brewing
This chai can be cooked on the stove following the same directions as the masala chai or can be served black or with a dash of milk.



Green Chai
Green chai is perfect for all those green tea lovers out there. This chai has is packed full of flavour with green tea, cinnamon, anis, fennel, ginger, cloves and black peppercorns.
Brewing
Green chai is at it's best when no milk is added all you need to do is simply brew for around 2min and is delicious with honey.





Oriental Chai
This chai is has a very full flavour filled with black tea, cinnamon, anis, fennel, ginger, cloves & black peppercorns. The fine spices in this blend make it one of the spiciest in our range.
Brewing
This chai can be cooked on the stove following the same directions as the masala chai or can be served black or with a dash of milk. Add a little honey if you want a sweeter brew.
If you want a really authentic chai try replacing the milk with condensed milk and cook on the stove.

Green Tea Shortbread










Ingredients

2 1/4 cups plain flour
a pinch of salt
1 cup unsalted butter, cut into small pieces
1/2 cup caster sugar
2 1/2 tablespoons high quality maccha powder

Directions

1. Combine flour and salt together in a small bowl.

2. In a mixer beat butter until creamy. Add matcha powder and beat until mixture is a uniform green color. Add sugar continue beating until light and fluffy.

3. Add about half of the flour and fold through. Gradually add
remaining flour, folding slowly. The mixture should look crumbly but even.4. Roll out dough to 2cm thickness, you can place it between 2 pieces of baking paper if it is too sticky.

5. Cut out your cookies using a cookie cutter and place on a tray 3cm apart. Re-roll remaining dough and repeat until all of the dough is used up. Refrigerate biscuits for 45min.

6. Preheat oven to 180 C. Bake for about 15 minutes or until the cookies are dry, firm and golden.
